African Stew

I love peanut butter so any recipe that has it is worth exploring.

 1 tbsp olive oil
 1 onion
 2 cloves of garlic, minced
 2 cups sweet potatoes, peeled and diced
 ¾ cup brown rice
 ½ tsp salt
 1 can of chick peas
 ¼ cup peanut butter
 2 cups kale, chopped
 2 tbsp lemon juice
 1 tbsp soy sauce

In a large pot over medium heat, saute onion and garlic in the olive oil for 3 to 5 minutes or until onions are soft.

Add vegetable stock, sweet potatoes, rice and salt. Simmer covered for 45 minutes.

In a small bowl, blend peanut butter with 1/2 cup of liquid from the stew to make a smooth paste. Stir into the stew along with the kale and chick peas. Cook for 5 minutes. Stir in lemon juice and soy sauce.
