Khao San Soba

Pulled this from the paper in 2007 - originally a recipe at the restaurant Fresh. For cilantro lovers!

Green Dressing
 4 cloves of garlic, minced
 4 tsp ginger, minced
 ½ cup unseasoned rice vinegar
 2 ½ cups cilantro, chopped
 ½ cup water
 ¼ cup sunflower oil
 ½ tsp wasabi powder
 ¼ cup honey
Noodles
 1 lb soba noodles (450 g)
 3 heads of broccoli, cut into florets
 1 ½ cups cashews, roasted
 2 cups carrots, peeled and grated
Green Dressing

Put garlic, ginger, vinegar, cilantro and water in blender or food processor and blend until smooth. With blender running, add remaining ingredients and process until smooth. Makes about 2 cups.

Noodles

Bring large saucepan of salted water to boil and add noodles. Return to a boil and cook for 4-5 minutes until just tender. Drain and rinse with cold water.

Meanwhile steam broccoli until just tender around 3-5 minutes.

In a large saucepan over medium heat, combine half soba, half cashews and half dressing. Toss gently until heated through. Add remaining soba, cashews and dressing and heat through.

To serve, divide noodle mixture over four plates. Top each portion of carrots and broccoli.
