1 tbsp olive oil
1 garlic clove, minced
1 tsp ginger root, minced
1 onion
1 bell pepper, red
1 cup mushrooms, chopped
2 cups brussel sprouts, thinly sliced
1 firm tofu package, cut into 1/2 inch cubes
3 cups cooked brown rice
1 tbsp sesame oil
1 tbsp soy sauce

Cook 1 cup of brown rice in 2 cups of water to get 3 cups of cooked rice. Follow cooking time on package.

Heat oil in frying pan, add garlic and ginger and stir for 1 minute. Add onion, pepper, mushrooms and brussel sprouts. Cook for 10 minutes until the brussel sprouts are bright green and tender.

Add tofu and fry for another 5- 10 minutes.

Add the rice and mix until warm. Add sesame oil and soy sauce until mixed. Serve warm.
